This industry has quite a number of employees, but in fulfilling requests, they often work overtime, so many employees complain that their income does not match. Therefore an analysis is carried out to determine the appropriate employee salary. The calculation of employee wages is based on the output produced by hourly employees and uses the Work Sampling method. This method is used to involve a number of complex work stages. Where, making the dough, molding the dough, and transferring the dough into the steamer, drying the dough, preparing the frying pan, starting the frying to wrapping the kemplang and crackers into the container. The standard output produced is usually 85.72 kg per hour and an employee can earn Rp.124 per kg wages. From the results of the implementation carried out that when employees with an increase in salary, the work will be done faster and the results will be good.
