Every day Sari Murni?s SMEs are able to produce 370 bakpao, 540 bakpia, and 250 breads, while the daily demand is 500 bakpao, 650 bakpia, and 350 breads. High workload is a main cause that production does not meet the demand. Because of production shortfall, workers in SMEs have to work overtime so workers get fatique. In this research, the design of breaks is one of the efforts made to reduce fatigue and high workload and remuneration of overtime is to increase production quantities. The best design of break is division of 15 minutes break that can lower levels of fatigue scoring 45.44 which decrease to 32.65 and the average heart pulse before 125.22 pulses/mins decrease to 91.24 pulses/mins. Overtime remuneration and giving snack is an alternative to increase production output of bakpao, bakpia, and breads. Giving snack aims to improve the work optimally and overtime remuneration improve the morale of the workers so that the amount of production increased to 500 bakpao, 650 bakpia, and 350 breads, so that consumer demand per day can be met. Sari Murni?s SMEs overtime remuneration costs are Rp 291.312 and it is able to increase the revenue of Rp 1,166,688.} }
