Red guava fruit (Psidium guajava Linn.) contains a quercetin which can be used to boost the immune system. The purpose of this research was to determine the quercetin levels in the juice red guava (Psidium guajava Linn.) by spectrophotometry UV-Vis. Initial identification of quercetin compounds was carried out by color testing using NaOH 10% , H2SO4, Mg and HCl reagents and Thin Layer Chromatography (TLC) test. The identification results showed that red guava fruit juice (Psidium guajava Linn.) was positive for quercetin. Quercetin levels in red guava fruit juice (Psidium guajava Linn.) was analized by spectrophotometry UV-Vis at a maximum wavelength of 371.5 nm. Quercetin levels in the sample that was 52,9976 mg / 100 g of juice.} }
