ABSTRAK
Jamu serbuk banyak dijual disepanjang pasar malam Sudi mampir Banjarmasin karena jamu serbuk dapat diolah menjadi minuman yang berkhasiat. Tujuan penelitian ini adalah untuk mengetahui gambaran jamur Aspergillus sp. Dan mengetahui persentase masing-masing spesies jamur Aspergillus sp. (Aspergillus flavus, Aspergillus fumigatus, Aspergillus niger, Aspergillus terreus, dan Aspergillus clavatus) pada jamu serbuk yang dijual di pasar malam Sudimampir Banjarmasin juni 2018. Jenis penelitian yang digunakan adalah survey deskriptif. Sampel penelitian adalah jamu serbuk yang diambi lsecara total sampling sebanyak 14 sampel pada 14 pedagang yang menjual jamu serbuk secara terbuka di pasar malam Sudimampir Banjarmasin. Jamur diidentifikasi dengan pembiakan pada media Sabouraud Dextrose Agar (SDA), inkubasi selama 5-7 hari pada suhu kamar, kemudian diamati secara makroskopik dan mikroskopik untuk menentukan jenis jamurnya. Hasil jamur Aspergillus sp. pada 14 sampel jamu serbuk didapatkan sebanyak 8 sampel positif Aspergillus sp. (57%) Hasil jamur dari spesies Aspergillus sp. Pada jamu serbukya itu dari 14 sampel didapatkan 4 sampel positif Aspergillus flavus (28.5%) dan 4 sampel positif Aspergillus niger (28.5%). Upaya untuk menghindari kontaminasi jamur pada bahan pangan dengan melakukan penyimpanan pada tempat yang kering dan bersih, menjaga keadaan suhu dalam tempat penyimpanan, dan melakukan pengemasan untuk mencegah kerusakan jamu.

ABSTRACT
Many powdered herbs sold throughout the night market Sudimampir Banjarmasin because herbs powder can be processed into a nutritious beverage. The purpose of this study was to determine the description of Aspergillus sp. and know the percentage of each species of Aspergillus sp. (Aspergillus flavus, Aspergillus fumigatus, Aspergillus niger, Aspergillus terreus, and Aspergillus clavatus) in powdered herbs sold at the Sudimampar Banjarmasin market in june 2018. The type of research used is descriptive survey. The sample of this research is powdered herbs taken in total sampling as many as 14 samples on 14 traders who sell herbs powder openly at Sudimampir market Banjarmasin. The fungi were identified by breeding Sabouraud Dextrose agar (SDA) medium, incubating for 5-7 days at room temperature, then observed macroscopically and microscopically to determine the type of fungus. Aspergillus sp. in 14 samples of powdered herbs were obtained as many as 8 positive samples of Aspergillus sp. (57%) Mushroom results from species of Aspergillus sp. in powdered herbs from 14 samples found 4 positive samples of Aspergillus flavus (28.5%) and 4 samples of Aspergillus niger positive (28.5%). Efforts to avoid fungal contamination of food by storing in a dry and clean place, keeping the temperature in storage, and packing to prevent damage to herbs.
