One of the banned food additives used as preservatives in food are formalin, but still occur even these rules are ignored. Experiment purpose to identify the preservative formalin the white rice consumed by coal workers in the district coal mine Tabalong. This experiment is a descriptive survey. The population in this experiment is that white rice production by distributing all catering lunch boxes to coal mining companies in the district Tabalong. Sample of this experiment was rice with a darker visual characteristics as much as 3 samples of 5 company coal mines obtained by simple random technique. Then the sample is 2 times each repetition interval of 3 days. Experiment taking by using a kit of reagents which indicated a positive reaction to the color change to red-purple, of 30 samples tested were 9 samples containing formaldehyde with characteristic rather hard texture, feels too hard but not too soud and the more colors on rice more dark of usually rice. Results are expected to further improve oversight related agencies, and businesses catering to be done according to standards and processing products as well as the legal community to further enhance the knowledge of the forbidden food preservative and permitted.
