		abstract={The objectives of the study were to know the processing of mackerel fish crackers in UD. Seven Islands, analyze the amount of income from the processing of mackerel fish crackers in UD. Seven Islands and to analyze the value added resulting from the processing of mackerel fish crackers in UD. Seven Islands.
The Method of research is purposive method for the research area determination. The research method used to determine the sample is purposive sampling or intentionally choose UD. Seven Islands. The analysis method used is descriptive method, income calculation method and analyzed descriptively, and method of calculation of value added Hayami. The data used are primary and secondary datas.
The results showed that the processing of mackerel fish crackers in UD. Seven Islands consisted of 6 stages of fish cleaning phase, fish milling, dough making, cracker printing, frying crackers and packaging. Revenues earned from the processing of mackerel fish crackers from one time production amounted to Rp. 1.168.781,62. The value added resulting from the processing of mackerel fish crackers is Rp. 14.292 / kg with the value added ratio was 23.30%.}
