This research was conducted from November 2022 until April 2023 at the Chemistry, Processing and Sensory Laboratory of Agricultural Products, Department of Agricultural Technology, Faculty of Agriculture, Sriwijaya University. This study used a Completely Randomized Factorial Design (RALF) with two treatment factors and each treatment was repeated three times. Factor A was the the ratio parts of watermelon (Citrullus lanatus) and water (1:1, 1:2, 1:3) and factor B was the part of the water melon (flesh of watermelon and watermelon peel). Observed parameter in this study included physical parameters (yield, thickness and hardness) and chemical parameters (moisture content and C/N ratio). The results showed that treatment A significantly affected the yield, thickness, hardness and moisture content. Treatment B significantly affected the yield, thickness and moisture content. The interaction of the two treatment factors had a significantly affected on the yield, thickness and hardness of nata de citrullus. The best treatment on the high value of the yield and thickness was A1B2 (the ratio parts of watermelon and water 1:1; watermelon peel ) with a yield value of 69.67%, thickness 7.25 mm, hardness 778.13 gf, moisture content 90.41% and C/N ratio 22.09.} }
