The purpose of this study was to determine the description of the application of food safety in food processing in Dr. RS. Mohammad Hoesin Palembang. Data was taken from May to June 2019. This type of research is descriptive with qualitative methods, data informants amounted to 7 people, based on key informants namely the head of nutrition, nutritionist and supporting informants namely food processors, and food presenters. Data was taken using the observation sheet instrument and interview guidelines. Data analysis uses content analysis. The results of this study are the application of food safety which includes reception of food ingredients, food storage, food processing, food serving, food handling temperature, personal hygiene, as well as Contamination control in nutritional installations of RSUP Dr. Mohammad Hoesin Palembang has been implemented but there is still a mismatch between the application in the field with the applicable regulations. The conclusion of this study is the application of food safety in food processing in the Dr. RS. Mohammad Hoesin Palembang has not been in accordance with applicable regulations. Suggestions for hospitals should continually monitor nutrition installations related to adequate and quality facilities related to food safety and awareness of workers such as using personal protective equipment.} }
