Abstract :
Broccoli (Brassica oleracea var. italica) classified as green vegetables that
contains carbohydrates especially low calorie glucoseso useful as a source of
energy and can be used as a low carbohydrate diet menu.Parts of broccoli can be
consumed is green flower head arranged tightly. The purpose of this research is to
know the glucose levels in broccoli flower. Fresh broccoli flowers is mashed by
blender. The extracts obtained are prepared with the addition of calcium
carbonate, lead acetate and sodium oxalate. Results of the preparation were used
for qualitative analysis with molisch test, fehling test, barfoed test and quantitative
analysis by UV-Vis spectrophotometry at maximum wavelength of 627.0 nm with
the addition of 0.1% anthrone reagent. Qualitative analysis of carbohydrates
showed that the broccoli flower positive contains glucose. The results showed the
average glucose levels in broccoli flowers was 674,39 mg/100g

/b with % KV of
1,6718%. Glucose levels in broccoli flowers are equivalent to 606,951 mg/100g of
carbohydrates.
