Abstract :
Carbohydrates are the main source of energy for humans, one component is
glucose. Absorption of glucose cause an increase in blood sugar levels. Dragon
fruit is useful for treating various kinds of diseases one of them is balancing blood
sugar levels. The purpose of this study to determine the levels of glucose in the
White Meat Dragon Fruit. Dragon Fruit White Meat taken the juice using a juicer, juice obtained is added with CaCO3, Pb Acetate, and Na Oxalate. Results of
preparation used for qualitative testing with test molisch, Benedict Test, and Test
Anthrone and Quantitative Test using Uv-Vis spectrophotometry at a wavelength
of 630 nm and 12 minutes of operating time with the addition of reagents
Anthrone 0.1%.The results showed average levels of carbohydrates in white flesh
dragon fruit juice obtained results 2,647g / 100g with the % KV of 0,003%.
