Abstract :
The white oyster mushroom (Pleurotus ostreatus (Jacq.) Kummer) ?glucan-containing compounds that have potential activity as antitumor,
antioxidant, anticholesterol, antiaging, and immune enhancer. A research has been
done on the white oyster mushroom (Pleurotus ostreatus (Jacq.) Kummer)
through determination to identify ?-glucan contained in the white oyster
mushroom (Pleurotus ostreatus (Jacq.) Kummer).
Isolation process was conducted by Yap and Ng method based on the
principle of boiling with distilled water by 100ºC followed by ethanol 96%
precipitation by 4ºC and then drying by freeze drying. Characterization of the
extracts through by Fourier-transform Infrared Spectroscopy (FTIR).
The result showed that the extraction of 3 kilograms white oyster
mushroom (Pleurotus ostreatus (Jacq.) Kummer) with Yap and Ng method with
modification produced total yields as much as 0,00013%. FTIR characterization
of molecular bonds identified in ?-glucan are O-H which is characterized by the
presence of an absorption peak at a wavelength of 3418,97 cm-1
, C-H which is
characterized by the presence of an absorption peak at a wavelength of 2928,07
cm-1
, C-O-C which is characterized by the presence of an absorption peak at a
wavelength of 1242,21 cm-1
, C-O which is characterized by the presence of an
absorption peak at a wavelength of 1043,53-1076,33 cm-1
, and ?-(1,3)-D-glukan
which is characterized by the presence of an absorption peak at a wavelength of
1076,33 cm-1
