Abstract :
Bombay Onion (Allium cepa L.) is part plant bulbs are often consumed the
community for seasoning and has a content of quercetin can decrease the levels of
sugar in the blood. Fresh Bombay Onion macerated using methanol by
comparison (1:8) phase I and comparison (1:4) phase II with a yield of 13,48%.
This research was conducted to find out the levels of quercetin contained in
methanol extracts of Bombay onion by reversed phase High Performance Liquid
Chromatography (HPLC). The stationary phase used is oktadesil silica (C18) with
mobile phase methanol : 0,1 % phosphoric acid (65:35), which is conducted with
a flow rate of 1 ml/min. HPLC detector set at 371 nm wavelength. The quercetin
standard solution is made on the range of concentration of 2-10 ppm with
correlation coefficient (r) produced 0,9957. The result of quercetin methanol
extract determination in Bombay onion is 0,4698% b

variation is 2,3929%
