Abstract :
Red Guava Fruit (Psidium guajava L.) is a fruit that rich in phytochemicals
that are beneficial to health. Lycopene is a carotenoid class compound that has
antioxidant potential and is linked to the immune system, which plays an important
role in disease prevention by maintaining sufficient function of immune cells to
deal with homeostatics caused by oxidative stress. The purpose of this study was to
determine the levels of lycopene in red guava (Psidium guajava L.) juice using the
UV-Vis spectrophotometric method. The juice of the red guava fruit was extracted
into a thick extract, then a qualitative test was carried out using the UV-Vis and
TLC spectrophotometric methods and the concentration was carried out using the
Lambert-Beer equation of the lycopene absorbance of the test solution measured by
UV-Vis Spectrophotometry at a wavelength of 470 nm. The results of this study
showed that red guava juice (Psidium guajava L.) was positive for lycopene with
an average level of 2.9096 mg/100 gram of juice, with a %KV value of 15,8866.
