Abstract :
Diabetes melitus is one of the diseases that the prevalence increase every
year. Rome beauty apples (Malus sylvestris Mill) are classified as fruits which
contain carbohydrates, especially low-calorie sugars, so they are useful as an energy
source and can be used as a low-carbohydrate diet menu. The aim of study is to
determine the total sugar that contained in Rome beauty apples. Fresh Rome beauty
is smoothed by blending. The preparation product were used for qualitative analysis
with molish test, benedict test, and anthrone test. The determination of total sugar
analyzed using UV-Vis spectrophotometry at maximum wavelength 628.2 nm with
the addition 0.1% anthrone reagent. Qualitative analysis of total sugar shows that
Rome beauty apples positively contain sugar. The results showed the average level
of total sugar in Rome beauty apples was 3,2499 g / 100g b
