Abstract :
Guava fruit (Psidium guajava L.) is one of the fruits that contain lowcalorie carbohydrates, so it is useful as an energy source and can be used to
control blood glucose by regulating a low-carbohydrate diet. The purpose of this
study was to determine the levels of carbohydrates in guava fruit juice. Guava
fruit that has been washed and then drained, then smoothed using a juicer. The
extract obtained was added CaCO3, Pb acetate and Na-oxalate. The preparation
results were used for qualitative analysis with molisch test, fehling test, and luff
test and quantitative test analysis by UV-visible spectrophotometry at a maximum
wavelength of 629,1 nm with the addition of 0,1% anthrone reagent. Qualitative
analysis shows that guava juice contains carbohydrates. The results of the
quantitative analysis showed that the average carbohydrate content of guava juice
was 2,83 g / 100 ml b / v with the acquisition of % KV of 0,67%.
