Abstract :
Diabetes mellitus is a comorbid of the Covid-19 virus which is currently
endemic in Indonesia. Prevention of diabetes mellitus has been mostly done by
consuming vegetables that have antidiabetic activity. The study was conducted to
see the activity of kale (Brassica oleracea var. sabellica) extract in reducing
glucose levels. Kale was macerated extracted using 96% ethanol solvent. The kale
extract obtained was analyzed for secondary metabolites. Determination of the
decrease in glucose levels was carried out by the Nelson Somogyi method and the
UV-Vis spectrophotometer instrument. Antidiabetic activity test was performed at
the 25th minute of operation and a maximum ? of 745 nm. The results showed
that kale extract was positive for flavonoids, tannins, triterpenoids and phenols.
The percentage of decrease in glucose levels in the concentration of 4 ppm was
2,2251% ± 0,46, 6 ppm of 16,4664% ± 0,27, 8 ppm of 30,6186% ± 0,46, 10 ppm
of 41,878 ± 0,27, 12 ppm of 55,4962 ± 0,20. The concentration of kale extract in
reducing glucose up to 50% (EC50) was 11,1319 ppm.
