Abstract :
String beans (Phaseolus vulgaris L) is one of the types of plants that are
widely used and easily found in various places. String beans contain compounds
quercetin has proven efficacy in lowering glucose levels in the blood. The purpose of
this research is to determine the levels of quercetin in the juice of string beans by
reverse phase High Performance Liquid Chromatography (HPLC), the stationary
phase is C18 column (Octadecyl xylane), mobile phase is methanol : 0,1 % phosphoric
acid (65:35) with flow rate 1,0 mL/minute. The detector is set to a UV 371,0 nm. The
results showed that the juice of string beans positive indication contains quercetin at
the range retention time from 6,831 to 7,222 minutes. Levels Quercetin in the sample
that is 0,0341 mg% in the juice. This study qualifies the test of precision and linearity,
because in the range quercetin standart 0,2 ? 1,0 ppm produces coefficient of
variation of the sample is 4,707% and coefficient correlation is 0,9976.
