Abstract :
This study aims to determine the antioxidant activity of the ethanol extract
of lemon peel. Lemon peel (Citrus limon L.) contains flavonoids, fenolics,
alkaloids, and Vitamin C which have potential as natural antioxidant. Free radicals
can come from pollution, dust, or metabolism inside the body, so an antioxidant is
needed to protect the body from the negative effects of the free radicals. This study
uses maceration methods and the testing of antioxidant activity using ABTS
radicals (2,2-Azinobis(3-ethylbenzothiazoline)-6-sulfonic acid) and it is stated with
the value of Inbition Concentration 50 (IC50). The presence of antioxidant
compounds will reduce ABTS radicals with blue-green characteristics to the form
of colorless non radicals. The result of the study shows that the ethanol extract of
lemon peel products IC50 of 11,1294+0,0905 ppm with very strong category.
