Abstract :
Cutlery is all kinds of tools used to process and serve food such as
plates, spoons, forks and glasses. This research aims to find out if the plates
and spoons in some food stalls in Kwarasan Village are contaminated with
bacteria, to know how much bacterial contamination on plates and spoons
in Kwarasan Village based on ALT method and to find out if the plates
and spoons in some food stalls in Kwarasan Village meet the requirements
of Permenkes No. 1096/menkes/per/VI/2011 on hygiene requirements of
food services that is 0 colonies/cm2.
This research uses descriptive design. The research was conducted
at the National STIKES Bacteriology Laboratory and the research time
was conducted in January-May 2021. The sample of this study was 9 plates
and 9 spoons. Sampling techniques used are Quota Sampling and the test
method used is ALT.
The results of the study on 9 plate samples and 9 spoon samples
examined found bacteria more than 0 colonies, with an average number of
10,635 colonies / cm2. This is due to various factors such as environmental
factors, cleanliness, habits and food.
Plates and spoons at some food stalls in Kwarasan Village are
contaminated with bacteria. Bacterial contamination on plates and spoons
in several food stalls in Kwarasan Village averaged 4.981,6 colonies/cm2.
Plates and spoons at several food stalls in Kwarasan Village, Grogol
District, Sukoharjo Regency do not qualify Permenkes
No.1096/menkes/per/VI/2011.
