Abstract :
Papaya (Carica papaya L.) is one kind of fruit plant that grows in many
tropical regions and various kinds. Papaya much loved Indonesian society.
Chemical content of papaya fruit such as ?-carotene is a provitamin A, which are
crucial for the formation of vitamin A. The purpose of this study was to determine
the content and the levels of ?-carotene in papaya Bangkok, papaya Hawai,
papaya California. Fresh papaya that has been mashed mixture extracted with
hexane: acetone: ethanol (2: 1: 1) v/v with maceration method. Results of
extraction used for qualitative and quantitative analysis. Quantitative analysis of
?-carotene using UV-Vis spectrophotometry at a wavelength of 452.0 nm.
Qualitative test results showed that papaya Bangkok, papaya Hawai, and papaya
California tested positive for ?-carotene. Average levels of ?-carotene papaya
Bangkok amounted to 9,6094 mg / 100 g, papaya Hawai at 11,0345 mg / 100 g,
and papaya California amounted to 6,5925 mg / 100 g. ?eta-carotene levels from
high to low at the papaya Hawai, papaya Bangkok and papaya California. The
results of the analysis using One Way ANOVA showed a significant difference
between the levels of ?-carotene papaya Bangkok, pepaya Hawai, and pepaya
California (P = 0.00).
