In the manufacturing process, manufacturers often use artificial sweeteners to replace natural sweetener in order to reduce the cost of production. Artificial sweeteners is the most widely used cyclamate and saccharin. In some studies mention that the use of cyclamate which exceed the threshold will cause diseases that are carcinogens. Become a problem is whether there is Ice on the Coconut cyclamate sold on the market and whether the levels exceeded the Martapura standards according to SNI 01-6993-2004 that maximum of 500 mg/kg. This research aims to know the levels of cyclamate in coconut ice. This research is descriptive research survey, the population was coconut ice sellers as much as 20, with 20 samples and sampling techniques are the total population. Based on qualitative laboratory examination on coconut ice drinks from 20 samples in the get 14 (70%) positif contain cyclamate and 6 (30%)does not contain cyclamate. Then proceed with the quantitative test method using gravimetric analysis of 14 samples that tested all exceeded the standards according to SNI 01-6993-2004 ranged between 397911 mg/kg and the highest levels of cyclamate 10349 mg/kg to the lowest levels of cyclamate. Expected results of the existing Government can supervise the Coconut Ice drink seller in the market for the next researcher and Martapura is advised to check the other sweeteners contained in sweetening drinks coconut ice. Keywords: Coconut Ice Drink On Sweeteners, Cyclamate, qualitative and Quantitative Test ABSTRAK Es Kelapa merupakan salah satu jenis produk minuman yang dijual di Pasar Martapura. Dalam proses pembuatannya, produsen seringkali menggunakan pemanis buatan untuk mengganti pemanis alami agar menekan biaya produksi. Pemanis buatan yang paling banyak digunakan adalah siklamat dan sakarin. Dalam beberapa penelitian yang menyebutkan bahwa penggunaan siklamat yang melebihi ambang batas akan menimbulkan penyakit yang bersifat karsinogen. Menjadi permasalah adalah apakah terdapat siklamat pada Es Kelapa yang dijual di Pasar Martapura dan apakah kadarnya melebihi standar baku sesuai SNI 01-6993-2004 yaitu maksimal 500 mg/kg. Penelitian ini bertujuan mengetahui kadar siklamat yang terdapat pada Es Kelapa. Penelitian ini bersifat survey deskriptif, populasi penelitan adalah penjual Es Kelapa sebanyak 20, dengan sampel 20 dan teknik pengambilan sampel adalah total populasi. Berdasarkan pemeriksaan laboratorium secara kualitatif pada minuman Es Kelapa dari 20 sampel di dapatkan 14 (70%) positif mengandung siklamat dan 6 (30%) tidak mengandung siklamat. Kemudian dilanjutkan dengan uji kuantitatif dengan menggunakan metode gravimetri dari 14 sampel yang di uji semuanya melebihi standar baku sesuai SNI 01-6993-2004 berkisar antara 397911 mg/kg kadar tertinggi siklamat dan 10349 mg/kg kadar terendah siklamat. Dari hasil yang ada diharapkan pemerintah dapat melakukan pengawasan terhadap penjual minuman Es Kelapa yang beredar di Pasar Martapura dan bagi peneliti selanjutnya disarankan untuk memeriksa bahan pemanis lainnya yang terdapat dalam pemanis minuman Es Kelapa.
