Abstract :
To reduce shrinkage quality and extend the shelf life of a commodity is required processes appropriate post-harvest handling, especially in the distribution process. In the process of transporting theis bulk transportation very possible occurrence of mechanical damage to the cabbage, it is necessary for the proper packaging techniques so that the quantity and quality of cabbage that reaches consumers remain well preserved. This study aimed to determine the effect of the type of packaging (bamboo baskets, sacks waring and plastic baskets) to the physical quality of fresh cabbage for distribution simulation using ground transportation. This research was conducted in June to October 2017 in the Laboratory of Biosystem Techniques Study Program of Agricultural Engineering Faculty of Agriculture, University of Sumatra Utara for observation parameters of porosity, weightloss,physical damage while testing against violence carried out in the Laboratory of Food Technology Study Program of Food Science and Technology Faculty of Agriculture, University of Sumatra Utara. The results showed that mechanical damage to the greatest cabbage contained in KBT3 treatment (bamboo basket filler with 5 hour long simulation) which is percentage of weight loss and extensive bruises injuries respectively by 3.38% and 8.77%, while the mechanical damage the lowest cabbage contained in KWT1 treatment (with an one hour simulation of waring sacks) is the percentage of weight loss and extensive bruises injuries respectively 1.10% and 1.83%. Thus, the most excellent packaging to reduce the deterioration of the cabbage is using waring sacks with the value of low porosity is 15.3%.
