Abstract :
Pineapple is a fruit that is often consumed by the public. Pineapple contains flavonoid
composition. Pineapple has hepatoprotective activity. The purpose of this study was
to determine the total flavonoid levels in raw pineapple juice (Ananas comusus
L.Merr) by UV-Vis Spectrophotometry. The method used in research is the
colorimetry method. Identification of flavonoids with concentrated HCl reagents and
magnesium metal which changes color to red which indicates a positive sample
containing flavonoids. The results of the study showed total flavonoid levels
contained in raw pineapple juice with an average flavonoid level of 0,00027367%
QE.
